While the the Coravin® preservation system is very widely recognized, many bars and restaurants still offer wine by-the-glass using other systems or none at all. Some sommeliers may have an ideological preference for seeing a particular bottle consumed all at once rather than extending its life over a period of weeks or months. Judges will consider the same criteria, including breadth, depth, height, balance, selection, accuracy, originality, suitability, design, and value in lists that do not contain Coravin®

Chún

Formerly working at various reputable refined Cantonese restaurants, Chef Tam is well-known for his expertise to preserve the freshness and original essence of foods and also his methods to cook the most luxurious traditional Cantonese dishes such as abalone, sea cucumber, and fish maw, all requiring substantial years of training and high level of culinary techniques.

Two signature seafood dishes are highly recommended. First is the “Stir-Fried Boston Lobster with Assorted Onion”, a live Boston lobster cooked in high temperature oil then stir-fried to showcase the cornerstone of Cantonese cooking technique, “wok chi”, as well as to manage the cooking time perfectly to keep the freshness of the lobster. Another one is the “Baked Crab Shell Stuffed with Crab Meat and White Mushroom”, a classic dish that was once for those of a lavish status, is reinvented at Chún with fresh crab meat delicately stuffed within the shell, delivering spoonful of sweetness of this crustacean combined with sautéed mushroom. The “Tea Smoked Crispy Chicken” is also a beloved dish for its perfect crisp and juiciness that ends with a lingering aroma of exquisite Longjing tea.

The wine cellar contains approx. 10.000 bottles and you will find over 1.750 different wines in the selection. In addition to wine there are over 100 different gins and a wide selection of whisky, cognac, beer, drinks and aquevit to taste. Paired with a wast selection of beverages they serve french inspired cuisine with cheese, ham, cured meat, paté and lobster soup.

The decor of the bar is warm and cosy, with comfortable chairs, soothing music and a very service-minded staff. During the summer season you can also enjoy the evening sun on the outside patio, with views over the fjord and the city skyline. Perhaps accompanied by a glass of Pinot Noir…?

On opening, Chin Chin Sydney pioneered a tap wine program with some of Australia’s best producers — including Brokenwood, Yabby Lake and Jim Barry— to create a bespoke offering to match with the chilli, sour, sweet and salty flavours on Chin Chin’s menu.
