Situated on the banks of Lake Vangsvatnet in the centre of Voss, Norway, Park Hotel Vossevangen enjoys magnificent views of the surrounding nature. The menu of the hotel’s Elysée restaurant changes frequently according to the seasons and the availability of local produce, featuring local Norwegian delicacies as well as international dishes. Jan-Bruse Andersen carved out the legendary cellar over 30 years ago. Today his tradition is carried on by Francesco Marzola, the hotel’s wine director and the cellar is filled with wines from all over the world. The cellar stores more than 42.000 bottles and the wine list has approximately 5,300 labels. The Sommeliers believe that wine should be drunk at the optimal window, which is the reason why they store the wine for a period prior its sale in the restaurant. The award winning cellar has also been recognised by World of Fine Wine for the World’s Best Wine Map which, together with advice from the hotel’s sommeliers, enables guests to find the perfect match for the cuisine. sketch’s home, a Grade II* listed building on 9 Conduit Street, was designed by James Wyatt in 1779 and was previously the headquarters of the Royal Institute of British Architects before later becoming the London Atelier of Christian Dior. sketch was inaugurated in 2002 by restauranteur Mourad Mazouz, and three Michelin starred Master Chef, Pierre Gagnaire. As a destination for food, art and music, the Mayfair venue continues to contribute to the building’s heritage as an environment for experimentation. Designed by Gabhan O’Keefe, the Lecture Room & Library room is decorated in shades of orange, with richly upholstered armchairs in purple and crimson. A core principle of sketch is to uphold the legacy of Millicant Fawcett spoke at a public meeting held at 9 Conduit Street in 1869. Pricing is aimed to be accessible and competitive due to the team's ability to buy through suppliers and private cellars alike, as well as having access to the family’s private cellar. Uniquely, Askham Hall does not often increase the price of older vintages to coincide with current market value, creating even more value for money for guests.

Coravin is used for more expensive wine by the glass and all wines are poured from the bottle in front of the guests. There are two main wine cellars, both temperature controlled, with one cellar next to restaurant lobby being open to view by the public.

Designed by Gabhan O’Keefe, the Lecture Room & Library room is decorated in shades of orange, with richly upholstered armchairs in purple and crimson. A core principle of sketch is to uphold the legacy of Millicant Fawcett spoke at a public meeting held at 9 Conduit Street in 1869. Curated by the Wine Director Frederic Brugues, the Lecture Room & Library wine menu boasts somewhere in the region of 850 – 1000 entries from all over the world. Frederic’s emphasis is on French wine from classic regions such as Bordeaux and Burgundy, with a focus on small unknown new growers, without forgetting the glories of the past.

Restaurant le Parc is located in the heart of Reims, less than an hour from Paris and is the main restaurant at the Domaine Les Crayères, a luxury hotel, nestled in a seven-hectare park. Although the hotel is housed in the historic home of the De Polignac family, the hotel modernises the “Chateau” style to create an elegant and sophisticated setting. Chef Philippe Mille oversees the dining spaces, offering the elegance and refinement of French gastronomy combined with the unambiguously modern interior architecture. In the classic comfort of The Yeatman restaurant, guests experience inspired cuisine with the accent on fresh local produce and on an imaginative pairing of food and wine. Given its surroundings among the traditional Port lodges of Vila Nova de Gaia, it is not at all surprising that The Yeatman devotes itself to Portuguese wine. The fine 1,200-bin wine book has been described as “a phenomenal representation of Portugal’s greatness” by World of Fine Wine Judges. Antica Bottega del Vino, in Verona, Italy, is among the oldest and most prestigious historic Italian dining establishments, tracing its long history and roots to the sixteenth century. There is less focus on Bordeaux than is often the case, and more Burgundy, with eclectic choices from Jura that will pair so well with the food. Overall this was assessed by World of Fine Wine Judges as a wine list that has been put together by a real wine lover.

The Club was founded by wine lovers, for wine lovers and continues to offer an opportunity for members to enjoy enjoying fine wine at sensible prices. Unlike most wine lists in the capital, they work on the basis of a small cash mark-up, rather than many times the cost price. The list features over 800 wines by-the-glass and a collection of over 4,500 bottles. This is thanks to extensive sub-basement cellars, holding thousands of cases of rare wines.

Allium is a small, Michelin starred, fine dining restaurant at the heart of the family owned boutique hotel, Askham Hall. A small professional team runs a tight knit operation, overseen by Nico Chieze and owner Charles Lowther. The restaurant showcases the locally sourced food from chef Richard Swale who concentrates on making use of the amazing produce grown in the kitchen gardens and from the Lowther Estate farms. Charles himself rears his own cattle, famous for his quality Shorthorn herd, and pork using traditional British breeds. The style of the restaurant is relaxed and unpretentious but still with a focus on a high level of service and quality of food. The restaurant team have worked with both local, and international wine merchants and experts to curate the list at Askham. Guests now not only come for the food but a wine experience too, trusting in the abilities of Nico, Joshua and their team. To further the wine experience for guests, the team have devised a programme of Wine Evenings featuring producers and experts who dine with a select group of guests in our wood panelled Private Dining Room. Wines are stored between the temperature and humidity controlled EuroCave and the cellar, which is a specially renovated room that is also temperature and humidity controlled. This houses the bulk of the collection of which they have around 1750 references with an inventory of around 12,000 bottles. Pricing is aimed to be accessible and competitive due to the team's ability to buy through suppliers and private cellars alike, as well as having access to the family’s private cellar. Uniquely, Askham Hall does not often increase the price of older vintages to coincide with current market value, creating even more value for money for guests.

Nautika restaurant lies on the very edge of the sea at Pile, alongside the western entrance to Dubrovnik's Old City in Croatia. From its terraces, diners can enjoy a unique view out to the Adriatic and up the cliffs to the fortresses of Lovrijenac and Bokar. The restaurant serves a refined style of Mediterranean cuisine focused on seafood, with a highlight being lobster from the Dalmatian island of Vis as well as Adriatic produce. Nautika supports small family producers who produce wines from Croatian indigenous varieties since some of which were close to extinction. 26 different Croatian indigenous varieties, produced as a single variety wine, have been selected to express their unique character. and the restaurant works in partnership with a few winemakers to acquire exclusively some of their wine editions which are produced between 250-600 bottles in good vintages. Croatian wines are given a starring role in the wine list, with accompanying notes highlighting Croatian viticulture. Overall, there are 9,680 bottles on the list. Coravin is used for more expensive wine by the glass and all wines are poured from the bottle in front of the guests. There are two main wine cellars, both temperature controlled, with one cellar next to restaurant lobby being open to view by the public.

Our guests sit at the long counter, with no classical separation between the dining room and the kitchen. Guests are free to watch the magic happen, and even more importantly: they are part of a communal whole. This reflects the restaurant's vision of a contemporary, forward-looking gastronomy. The restaurant has made a conscious decision to shift the focus squarely onto local producers and renounce produce from afar, including olive oil, pepper, nutmeg, citrus fruits as well as vanilla, cinnamon and, of course, chocolate.. This philosophy extends to promoting environmental and economic sustainability and promoting a better eating culture for health. The wine list provides extensive well-written information. There is a close focus on fermentation and origin and the list is highlighted by fruit-driven, terroir-driven and signature wines. This is a great concept and a great wine list.

Restaurant JM is the restaurant for Hotel Jörg Müller which is located on Sylt, the northernmost island of Germany, an area that is characterised by shifting sand dunes. Top German chef Jörg Müller’s restaurant “JM” is a cozy Friesenstube with wooden beams and tiled walls, that features regional dishes including the best seafood, creatively revised. Müller’s inventive French-influenced cuisine includes dishes such as veal fillet on black pudding with young vegetables; and lukewarm marinated char with smoked fish mousse and beetroot. In the restaurant wines are presented in a traditional style, including classic and natural wines. Gabriel and Riedel glasses are used for wine service. There is no separation of wines by the glass: they open any wine as agreed with the guest. The cost of wine does not increase compared to the price of wine in a standard bottle, with wine "to go" offered at a 33% discount. The wine is stored in a cellar equipped with a Eurocave.
