Hajime, Osaka

Hajime in the city of Osaka, Japan, was founded by Hajime Yoneda to deliver cuisine that represents the beauty of order found within the balance and harmony of nature, the earth, and space. Chef Hajime Yoneda is famous for his commitment to expressing the local terroir, with a style of cooking that blends Spanish, French, and Japanese influences. It’s a commitment he takes to extreme lengths in his signature dish “chikyu,” a presentation of 110 local vegetables, herbs, and grains. And it’s a commitment that also shows up on his elegant wine list. In a selection that generally aims for the right vintage of a broad spread of producers, rather than deep verticals of the same old famous names, the Hajime list includes an extensive set of Japanese wines. It also features the stunning Pinot Noir and Syrah made by the ultra-fastidious ex-pat Japanese producer, Hiro Kusuda, in Martinborough, New Zealand, but the bulk of the list is given over to terroir-driven French wines, led by Burgundy and grower Champagne, as well as wine from Alsace and from Languedoc-Roussillon. Bennelong is all about the provenance of the food we are serving. The menu is very much crafted in partnership with the farmers, fishermen, breeders and providores from across the land with whom our chefs work together with every day. It's a two way process: we're responding to what’s in season and the best of what producers are bringing us, but on another level, we are planning menus a season or two ahead, working hand-in-glove with our producers to develop ingredients tailored to Bennelong’s menus. Our wine list is intended to match our menu, we wish to highlight the very best of the traditional and contemporary wines that Australia has to offer. We also want to deliver international heroes, both old and new producers.

KUUK, Mérida

Located in Mérida, the largest city in Yucatan state in Mexico, Kuuk is chic in every sense of the word, from the cutlery and decor to the wine cellar and suave waiters. The cutting-edge menu features eight courses, each prepared using molecular gastronomy and fresh ingredients, most of them grown on-site. Many of the Yucatecan dishes are cooked in the custom built "pibil" oven, a modernized version of the underground cooking method that gives food that smoky flavor. Although small, each course is a work of art—picture dollops of baby pumpkin dusted with goat cheese the texture of powdered snow or transparent potatoes as thin as tissue paper.
