Cáceres, Spain

Atrio is located in the historic city of Cáceres, in Extremadura, Spain, an old town centre designated a world heritage site by UNESCO. The building that houses the restaurant and hotel is a brilliant fusion of traditional architectural and modern aesthetics. The co-owners, Juan Antonio Pérez and José Polo, have created an international culinary landmark with a locally influenced, honest, but refined menu. The listing is beautifully and clearly presented, but is also full of genuinely informative notes and background material on the world’s wine regions; it’s a pleasure to read and browse from. As the World of Fine Wine Judges have put it, “Atrio’s list immediately strikes you as being a beautifully designed book (that one would happily display on one’s coffee table) rather than a wine list. It contains explanations, history, and original photography—it’s a special list.” More importantly of course, it also contains some great wines, a superb spread of top Spanish producers, and a no less intelligent choice of French and German bottles including some quite impressive verticals. Big Wine Freaks restaurant and bar in Moscow is one of two establishments, with the sister establishment in St Petersburg. The menu features an international set of dishes, matched to a good selection of wines, with some by the glass. The list includes a very good sparkling wine and Champagne selection and a long list that features many up-and-coming producers, as well as already famous ones. There is less focus on Bordeaux than is often the case, and more Burgundy, with eclectic choices from Jura that will pair so well with the food. The restaurant offers an impressive selection of large formats and by-the-glass selection. The Britannia Hotel, Trondheim, Norway, is a large, classic city hotel, known as the world’s most Northerly ‘Grande Dame’ Hotel. The oldest part of today’s building is the imposing, cream coloured façade, which dates back 1897. The hotel offers a number of dining spaces, whether for fine dining, afternoon tea or a more casual dining. The hotel’s Michelin starred chef, Christopher Davidsen, offers a menu that includes the option of a Champagne lunch and the Nordic region’s only caviar bar. The large cellar at Britannia Hotel holds some of the most exciting and exclusive bottles of wine from all over the world. Sourcing and selecting both young and mature wines, the sommeliers hope to excite both the novice and the connoisseur. The primary goal is to offer a unique and complete selection of wines from the old wine world, but also include some of the great new wines. The wine list is updated regularly, and fine wines are marked up fairly which encourages guests to make a return visit. The World of Fine Wine Judges praised this as 'an incredible list with deep verticals including mature vintages where they are exciting to explore, for example in the whites from Nikolaihof and packed with rare wines like Bussaco - a real joy.' Cabotte

Located near to the Bank of England in the City of London’s financial district, Cabotte Wine Bar & Restaurant, resembles a haute cuisine version of a traditional local bistro in the French countryside. The restaurant was founded by two Master Sommeliers, Xavier Rousset MS and Gearoid Devaney MS, with extensive London restaurant experience. Head Chef Edward Boarland creates the lunch and dinner with the seasons in mind, using the very best ingredients available. Cabotte sustains a strong allegiance to its original ambitions of showcasing the wines of Burgundy. Its position as, first and foremost, somewhere to enjoy great wine is reflected in a carefully considered wine list. More than 1,000 wines are available (with 650 of these being from Burgundy) and much of the Burgundy is fairly priced. Located in Pauillac, France, the Château Cordeillan-Bages hotel and the surrounding vineyards sit in the middle of the Médoc region. Aspects of the chateau building date back to the 17th century, and the restaurant’s spacious and minimalist décor includes artwork to complement the historic setting. The Head Chef Julien Lefebvre continues a legacy of French fine dining using the finest local produce. The wine cellar has an adjacent tasting room, with a garden terrace also connected, where diners can choose to have a private meal, or merely a small gathering to explore Cordeillan-Bages’s wines of which they have verticals of all Cazes properties. The cellar holds a notable 1,800 wines and, unlike many winery owned restaurants, Chef Sommelier, Arnaud Le Saux, has developed a wine list boasting the Bordeaux grands crus, sometimes also with verticals, followed by a selection of wines from other regions. The mark up on the wine list reflects the hotel setting. There is good value in the Burgundy selection and also in the Didier Daguenau selection which is priced below UK levels. Influenced by the stylish country inns of Provence and Tuscany, the interiors create a setting of warmth and intimacy. The restaurant’s fully retractable glass roof creates a bright and airy dining space in summer months and in winter months it is transformed by a crackling fire. Owner/ chef Roxanne Lange describes how she uses personal experiences as the basis for her French-inspired dishes. The menu changes regularly to suit the seasonal availability of locally sourced ingredients. The renowned wine cellar includes over 2,500 selections, ranging from a modest bottle of ‘Vin De Pays’ to the greatest names in the wine world. The judges at The World’s Best Wine List Awards were certainly seduced by the range, depth, and mix of classical and adventurous international selections on the Clos Maggiore list. That depth and variety can be seen immediately in the two sections with which the list opens. The by-the-glass list is a model of well-chosen, well-priced variety. The “Sommelier Selection” that follows picks up the theme with a wide-ranging global choice arranged by grape variety. The menu features the authentic taste of Tyrol as well as sophisticated international cuisine. The wine listing includes a good Austrian wine selection featuring lesser known grape varieties and starting at affordable prices. Fine wines are fairly priced, with most from recent vintages. There are some exciting choices for international wines including the more on-trend wines of South Africa, Spain and others. Overall this is an excellent list. Döllerers Genusswelten restaurant, located in Golling and nestled at the foot of the Austrian Alps, is, a family-run business spanning three generations. What started out as a tavern and butcher’s shop around a hundred years ago is now one of the top gourmet addresses in Austria under award-winning chef Andreas Döllerer, who is well known for his Alpine cuisine. The cellar reflects a decades-long devotion to wine, serving 25,000 bottles across 2,500 labels, also offering several verticals and one-of-a-kind of large formats. The sommelier team works to Head Sommelier Alex Koblinger, the only Master Sommelier and Sake Samurai in Austria and six-time winner of Sommelier of the Year. The wine menu champions Austrian wines and includes some real gems, such as a mini-vertical of Grange des Péres and Jamet Cote Rotie at affordable prices. Located in Copenhagen in Denmark, Formel B restaurant is an award winning restaurant whose brick exterior and décor are characterised by modern simplicity and the use of natural materials. The vision in the formel B kitchen similarly centres on the quality of the individual produce, driven by a quest to achieve perfection based on simplicity. Formel B chefs work closely with their suppliers who are mainly small Danish producers who respect sustainability and nature. The menu is dynamic and consists of 10-15 dishes that change with the season and mood of the chef. The wine list has a similar ethos, based on small producers, many of them natural and organic or biodynamic, from classical Europe. Burgundy is a particular strength of the list but there are many fine choices from Bordeaux, the Rhône and Piedmont, too, and there are verticals of some very exclusive producers, from Arnaud Ente, to Fourrier and Prieuré Roch. There are plenty of off-beat modern choices including a trio of French orange wines from Sancerre’s Sébastien Riffault and Yann Durieux in Hautes Côtes de Nuits. The hotel houses Mathias Dahlgren’s Matbaren restaurant which is a Stockholm classic, and next door is his lacto-ovo vegetarian restaurant Rutabaga. The wine cellar at Stockholm’s Grand Hôtel contains some 14,000 bottles and 1,800 different wines, making it among the most extensive collections of fine wine in Europe. World of Fine Wine Judges praise the Grand Hôtel for the quality of its collection as much as its quantity. As the judges note, it is “a remarkable list with great depth, and some very rare finds.” particularly when those wines take their place alongside the rather more accessible array of more recent vintages from the best contemporary producers from all over the world. The Hélène Darroze restaurant is located in The Connaught, a five star hotel in Mayfair, London, offering a luxury dining experience. The carefully curated blush shades of the walls are set off by modern elements such as exposed wooden table tops, placing craftsmanship in the spotlight. At the Michelin-starred restaurant each dish is grounded in seasonal produce sourced from the farmers, makers and growers carefully chosen by French Chef Hélène, with every menu being a reflection of guests’ personal tastes. Head sommelier Mirko Benzo brings life and love to a fine list that draws upon the 1,200 or so labels in the cellar. “We wanted to bring a completely different wine list from all around the world,” says Benzo. However it is the considered selection of the best Champagne houses, including verticals of old vintages of their top wines that have previously captured World of Fine Wine judges’ imagination. It doesn’t stop there. That sense of discriminating classicism is also apparent elsewhere on a list that is strong in classic Europe but ranges widely, and which is as elegant and full of surprises as Darroze’s superb contemporary French cuisine. The hotel’s Sommelier, Josef Neulinger, has created an award-winning wine list in which the entire list has an outstanding vintage depth with fine wines fairly marked up. Located on the Quayside in Newcastle upon Tyne in the UK, the House of Tides restaurant has an unassuming exterior of old-fashioned brickwork and cream-colored stone. The building is a Grade 1 listed 16th Century former merchant’s town house that has been restored. The first floor informal fine dining restaurant has exposed beams and a big open fireplace, as well as views over the River Tyne. Abby and Kenny Atkinson opened the establishment in 2014 to showcase modern British cooking, delivering thoughtful and elegant food with an emphasis on using seasonal and sustainable produce which changes as the seasons evolve. The wine list is a careful construction of the Atkinson’s favourite wines and the ambition is to take guests on a journey through vineyards around the world; giving proper representation of the countries and regions showcased. Just as with the food, the sommelier team are looking for flavour, acidity, balance and texture, and often, something that just makes them smile. Il Convivio Troiani is located in central Rome in a building surmounted by an ancient tower which it is said housed soldiers in historic times. The menu focuses on regional cooking that does not follow trends, but is authentic and based on the use of organic produced sourced from local small-scale producers. The cellar has more than 3,600 Italian and international labels. Praised by the judges at the World’s Best Wine Lists for its “amazing breadth and length,” the wine list at Rome’s Il Convivio Troiani is comfortably one of the most impressive in Italy. Somewhat old-fashioned in presentation, it’s a hefty tome that requires an index to help diners negotiate its 160-plus pages of selections. But the time spent perusing its pages is worthwhile, since it offers a remarkable in-depth tour of Italian wine, from Franciacorta to Sardinia, as well as some outstanding choices from France and the rest of the world. Highlights include a Coravin-enabled fine wine by-the-glass selection and a broad selection of large format bottles. But the meat is the 75-cl selection, which is full of big and up-and-coming names and rare older vintages, a magnificent range of possibilities to pair with the immaculate modern Italian cuisine. The restaurant retains its medieval character with solid wooden floors, candlelight, and white painted vaulted ceilings. The menu showcases Scandinavian food, with a particular focus on homemade bread. The wine list is exceptional with some pretty special verticals, including Cayuse. It is easy to see why wine lovers would travel here from very far to drink from this list. The restaurant also offers a wine pairing service. Anne-Sophie Pic, the world’s most decorated female Michelin-starred chef, brings her unique culinary identity to the menu. Exploring unusual cooking methods and introducing guests to new and unexpected flavour combinations, La Dame de Pic London offers a fresh take on Anne-Sophie’s French culinary heritage from four generations of chefs. The wine listing has a particular focus on the Rhone Valley, but in addition to this, wines from other regions in France, Europe and the rest of the world are on offer. The World of Fine Wine Judges praised the great value wines in the listing and the regularity with which new discoveries are added to the list. Magnum Wine Bar takes a step away from complex wine lists common in many of Moscow’s wine venues. Instead it delivers easy to comprehend sections like ‘Every Day Wine’ (a selection of 15 items, starting from 350 rubles for a glass); ‘Wine for a Reason or ..Not’ (a selection of 20 items, starting from around 550 rubles for a glass); ‘Gourmet Wines’ and ‘For Wine Aficionados’. The list includes top producers from their respective regions, for example Prager and Knoll from Wachau, Avaro Palacios from Priorat, Trimbach from Alsace, etc. as well as an excellent red Magnum selection. The menus focus on classics from the French cuisine with freshness and depth of taste evident in every dish. Owner and sommelier Serge Verboven's passion for wine translates into an interesting and very fairly priced wine list. A wide range of regions, hundreds of top producers and numerous references in various years feature in his award-winning wine list with plenty of good choice in bottles under 50 Euros. There are no white tablecloths and there is no separation between cooking and dining spaces in order to recall the feeling of a home kitchen table. The restaurant has made a conscious decision to shift the focus squarely onto local producers and renounce produce from afar, including lemons, tuna and chocolate. This philosophy extends to promoting environmental and economic sustainability and promoting a better eating culture for health. The wine list provides extensive well-written information. There is a close focus on fermentation and origin and the list is highlighted by fruit-driven, terroir-driven and signature wines. This is a great concept and a great wine list. The wine list is unique in Austria and its match would be hard to find anywhere in the world. The six wine cellars are in the foundations of this historical building, part of the city’s medieval fortification system and tours of the cellars are offered. Each cellar has its own characteristics, special dedication, unique design and ideal climate for the storage and aging of great rare wines. Since being named Wine List of the Year 2014 at the inaugural World’s Best Wine Lists Awards, Palais Coburg Residenz competes annually across five categories with each year’s overall winner in the Champions’ League. Truly global in its coverage, diners are just as likely to find highlights in the extensive Californian and Australian sections they are in France, Italy and Spain, while the best of the local Swiss scene is also well represented.
