Archipel Restaurant

One of the most highly acclaimed restaurants in Mauritius, L’Archipel, is set spectacularly alongside the infinity pool at Constance Le Prince Maurice. The elegant space exudes a sophistication and style that is perfectly matched by the menu.

Led by Executive Chef Michael Scioli, L’Archipel has earned itself a stellar reputation amongst food connoisseurs and regular guests, and hosted the sold-out 12* dinner at the 10th edition of the Festival Culinaire Bernard Loiseau.

Chef Michael and his team take the finest quality ingredients, with a focus on Asia, and transforms them using French techniques to create exquisite dishes infused with spices and warmth, combining flavours you might not expect.

The attention to detail here is exceptional. From the very first taste of mise bouche – where else could you try delights such as Parmesan Pannacotta – to the sweet grand finale, this is a place that delights.

Each day, Chef Michael suggests and alternates two menus, changing what’s on offer according to the very best ingredients available that day.

Indian infused flavours include Farm chicken “quenelle” with coconut emulsion and massala curry sauce, and Fish Hydrabadi, bhindi do payasa, tamarind chutney, sabzé butter masala and lemon rice.

Mauritian specialities such as seafood rougaille and Pork salmis with glazed small onions, garnishes and accompaniment are popular, as are more staple dishes served with the Archipel touch – Chicken supreme stuffed with dried mango and almonds, butter brioches and spinach brèdes.

The desserts are a real highlight here, and last week’s sweet treats included pineapple carpaccio with mint, mango sherbet and Soufflé with chocolate and ginger, almonds shortbread and its ice cream.

Wines, Cognacs, Armagnacs and Ports

The wine cellar has over 275,000 bottles with over 5000 selections from 23 countries, acquired over decades by Graycliff’s owner and CEO, Enrico Garzaroli. He is passionate about the quality of the wines he seeks out and carefully adds to his collection, which is the 3rd largest private collection in the world.

A wine connoisseur’s dream with some of the rarest vintages in store, the cellar’s inventory ranges from such wines as an 1865 Château Lafite, to the oldest and one of the most expensive bottles in the world, a 1727 Rudesheimer Apostelwein from Bremer Ratskeller in the ”Rheinghau” Region, priced at US$200,000, to today’s most popular vintages.

In addition to the considerable wine inventory, Graycliff also boasts a Cognacteque, a unique collection of Cognacs, Armagnacs, Whiskey, Rum and more – one of the largest such collections in the world. The Cognacteque and Wine Cellar are constantly expanding as the CEO makes new finds to add to his collection.

Imàgo

Imàgo – image and magic – summarises in just one word the philosophy behind the restaurant at the Hassler in Rome: a location where the view and the flavours come together to create a unique culinary experience.

Imàgo, the michelin starred restaurant, offers guests a breathtaking view through the large windows. Soft music, an elegant, refined setting and subtle lighting for the tables make this a truly unique location. In 2017, after ten years, Imàgo underwent a sof t renovation.

The idea was to make the spaces even more comfortable and inviting with a series of carefully planned operations: the floors were relaid to improve soundproofing and a new lighting system was installed with di rect light on the tables, bringing the food into better focus, as well as creating new cues for
the mise en place.

An elegant new dark wood covers the floors, highlighting the white tablecloths and lending fur ther refinement to the ambiance. A glass-fronted and temperature-controlled wine cellar was also installed, giving the wines a starring role and making them an integral part not only of the fine dining experience, but also of the Imàgo’s unique mood.
