Successful lists offer unparalleled depth in the wines of the chosen country or region and a strong focus on local grape varieties, enabling wine lovers to engage as fully as possible with that region whilst outside of it. While these lists promote their particular country or region, Judges still consider the criteria of breadth, depth, height, balance, selection, accuracy, originality, suitability, design, and value.

Bold, plush and refined, Grill Americano is restaurateur Chris Lucas’ love letter to New York City, classic old-school dining and Venetian cuisine.

The menu marries the best of Italian flavour and technique: parmesan cacio e pepe polenta with spicy aioli; hand-made linguine aglio e olio with spanner crab; and pockets of tortellini cradling fresh lobster and saffron.

Driving the menu is the flair and spark of an open kitchen with a hand-built wood oven and Josper Grill cooking some of the very best Australian beef and seafood.

A stately piece of marble forms the long bar, where guests enjoy a pre-dinner cocktail before they’re shown their table by waiters in crisp white jackets. The sumptuous room is dressed in royal blue banquettes and studded leather chairs you’ll want to lose time in.

The cellar carries 2000+ bottles, spanning classic producers and regions, and international cult favourites. While the Italian selection specifically has extraordinary breadth and depth, the remainder of this much-lauded wine programme proves as impressive, dedicated to highlighting the very best international wines.

Focused on exploring the dichotomy between Old World and New World, this is an ever-evolving wine list, complete with feature pages spotlighting true icons of Italian and Burgundian wine.

We have over 10 large wine cellars with different temperatures, which ensure different types of wines are stored at the ideal temperature according to the characteristics of their region of origin and grape varieties.

Coravin® service, a wine preservation system, is also available, allowing guests to enjoy the fine wines by the glass without opening a bottle.

Salis Chania

Chamia, Greece

In the old harbor of Chania on the northern coast of Crete, Best of Award of Excellence winner Salis uses some of the Greek island’s best ingredients, pairing them with one of the strongest wine lists in the Aegean Sea.

The restaurant grows its own produce for co-owner and chef Afshin Molavi’s menu of sleekly plated mezes and local delicacies, from hard-to-find cheeses to cured meats.

For something more substantial, look to dishes such as cacio e pepe with dehydrated mushrooms or duck breast over a beetroot-dyed risotto.

Also the wine director, Molavi curates a list of more than 1,400 selections, focusing on bottles from Greek producers, including Domaine Katsaros, Kir-Yianni and many more. The list pays close attention to France as well.
